Stuffed Seven Layer Bar Cookies (aka Magic Bar Cookies)

By Bake It with Fat and Weird

Welcome back to another episode of Bake It with Fat and Weird! Today, we’re diving into a nostalgic treat—Seven Layer Bars—but we’re giving them the full Fat and Weird cookie treatment. Think: chewy cookie dough stuffed with all the classic layers of a magic bar, baked into one massive bite of cookie heaven.

If you’ve ever had Seven Layer Bars (or Magic Bars), you know they’re basically just seven layers of indulgence. But let’s be real—those seven layers are really seven ingredients: butter, graham cracker crumbs, butterscotch chips, chocolate chips, shredded coconut, sweetened condensed milk, and chopped nuts. Still, whatever you call them, they’re undeniably delicious.

In this version, we’re taking those same flavors and turning them into a cookie that’s chewy, gooey, and packed with mix-ins. We even made a frozen core of sweetened condensed milk, graham cracker crumbs, and toasted coconut to stuff inside each cookie. Yes, you read that right. Let's get into how it all comes together!

🍪 What’s in the Cookie Dough?

We start with cold butter to help the cookies bake up thick. Into that, we cream a mix of brown and white sugar—less than usual because this dough gets loaded with sweet mix-ins. The wet ingredients include eggs, molasses, honey, vanilla extract, and yes… sweetened condensed milk right in the dough for that signature magic bar flavor.

To nail that graham cracker crust vibe, we use a combo of graham flour and all-purpose flour. (You could also sub in graham cracker crumbs if needed.) For leavening and texture, we toss in baking soda, salt, and a little cornstarch for chew.

And the mix-ins? We go hard: toasted coconut, semisweet chocolate chips and chunks, chopped nuts (walnuts or pecans), and butterscotch chips. Every bite hits you with that classic layered flavor.

💡 The Secret Core

One of the coolest parts of this cookie is the core. Here’s what we did:

  • Mixed sweetened condensed milk, toasted coconut flakes, and graham cracker crumbs.

  • Pressed the mixture into silicone molds.

  • Froze them so we could easily stuff each cookie.

Pro tip: this step makes stuffing super easy and ensures that gooey center stays put during baking.

🧁 Assembling the Cookies

To shape the cookies:

  1. Scoop out a portion of dough.

  2. Flatten it in your hand and place one of the frozen cores in the center.

  3. Wrap the dough around the core completely.

  4. Optionally top with more coconut or graham crumbs before baking.

These cookies are huge, gooey, and packed with flavor. You get the crunch from the nuts and coconut, melty bits of chocolate and butterscotch, and that dreamy sweet center.
